cauliflower tacos with cucumber mint salsa

I love Mexican food. I love cauliflower. I love avocado. So yea, this is like the best creation ever. I mean, who doesn't love tacos? Let's be real.
Forget about chicken and beef. Cauliflower is so much better for your body, your health, the planet, the animals and your digestion system. But, who's keeping track? Cauliflower is filled with sulforaphane which can help kill cancer cells. It also has heaps of antioxidants that help detoxify the body. Cucumber is extremely hydrating as they are 95% water. Like cauliflower, cucumbers flush out toxins from the body and will even freshen your breath. Mint is so refreshing. Smell it, it's so invigorating. Mint will help cleanse your palate, aids in digestion and can even help get rid of nausea and headaches naturally. Nature is amazing. 


1 head of cauliflower
corn tortillas (check the ingredients on the packaging!)
1 avocado
1 cup of cucumber, diced
3 tablespoons of mint, thinly chopped
4 tablespoons of red onion, diced
1 tablespoon of white wine vinegar
2 teaspoons of olive oil
1 lime, juiced


Preheat the oven to 400 degrees Fahrenheit
Cut the cauliflower into mini florets and put on a baking sheet, mixed with a small drizzle of olive oil
Let the cauliflower roast for 40 minutes
While the cauliflower is in the oven, it's time to make the salsa
With a peeler, take the skin off the cucumber and cut it into quarters. Slice the seeds off and discard
Dice the cucumber (cut into small pieces)
Put the the diced cucumbers, red onion, mint, vinegar, olive oil and 1/2 of the lime juice into a bowl and mix
Next, scoop the avocado out of the skin and put into a bowl with the rest of the lime juice and dash of salt
Mash the avocado mixture with a fork
If you would like to toast your tortillas on the stove, toast for about a minute on each side
You can begin to assemble when the cauliflower is done cooking
Spread some of the mashed avocado on a tortilla, place cauliflower on top and then sprinkle with the cucumber mint salsa
