strawberry walnut date bites

I posted a similar date bite recipe recently and it was so delicious, (and were eaten very quickly) I wanted to make another batch using strawberries ASAP. These date bites are so simple to make and take no time whatsoever. However, in order to make them you do need a food processor. A food processor is essentially a blender for dry ingredients and doesn't require any liquid to operate. This is a piece of equipment that I would definitely recommend you invest in. Once you do, I bet you will have these little treats permanently stocked in your refrigerator. Medjool dates are packed with the mineral magnesium. Magnesium is the master of treating inflammation. It is known for reducing the risk of cardiovascular disease, Alzheimer's, arthritis and high blood pressure. Strawberries are such a yummy and magical fruit. They promote eye health and reduce the risk of cataracts. These amazing berries are also filled with Vitamin C which keeps our immune system in check but also helps produce collagen. Yes, you heard right- strawberries will help you build collagen, resulting in younger, firmer looking skin. Walnuts are a badass nut because they contain these ultra exclusive antioxidants that are only found in a few foods. So not only do these little bites have heaps of protein, healthy fats, superfoods and the Lara Croft of Antioxidants working for you but they are also so damn delicious. 


14 medjool dates, pitted
1/2 cup freeze dried strawberries
2 tbs almond butter
1 cup walnuts, chopped
1 tsp coconut oil
1 tbs chia seeds


Combine all of the ingredients into a food processor and blend until it thick and sticky. It will usually clump into a big ball
Roll the mixture into bite sized balls with your hands
Let the bites set in the freezer for 30 minutes
Store in the fridge in an airtight container
