blueberry coconut date bites

Want to know a secret? Sweet treats don't need to be unhealthy in order to be lick-your-fingers amazing. Case in point, these little delights are not only such a breeze to make but they are awesomely healthy and nutritious. Oh, and they're also raw. I promise, you will not be able to stop eating these because they are so yummy and satisfying. I am not a huge baker. Mostly because I don't like to have desserts sitting around because I will demolish them. As a kid I would eat my entire Halloween candy hall in less than a week. However, these bites are guilt free! Medjool dates, which are so gooey and caramel-y, are packed with fiber to keep things moving comfortable. They also have more potassium than bananas and potassium helps build muscle! Almonds contain heaps of magnesium which helps lower blood pressure levels. Not to mention, blueberries are one of the most nutrient and antioxidant dense foods on the planet. So, there's that. 
 

I N G R E D I E N T S

12 medjool dates, pitted
1 cup of raw, unsalted almonds
1/2 cup freezer dried blueberries
1/4 cup of shredded coconut
1 tablespoon of coconut oil
Salt

R E C I P E

Mix the almonds, blueberries and coconut in the food processor for 2 minutes
Next, add in the dates, coconut oil and a pinch of salt
Blend until the mixture becomes thick and sticky
Once it is completely mixed, roll it into small balls with your hands
Add coconut flakes or chia seeds to the balls and then put them into the freezer to set for 30 minutes
Keep in a container in the fridge
This recipe makes about 15 balls
