If you are looking for a really simple dish to make, that you can throw together in 15 minutes and your whole family will love- look no further. This recipe is amazing and is packed full of nourishing ingredients. Red peppers contain lots of these amazing little things called carotenoids which shut down free radicals and have cancer fighting properties. Brown rice is just awesome. Whole grains are an essential part of our diet. They contain many nutrients like fiber, B vitamins, antioxidants and reduce the risk of heart disease, type 2 diabetes and obesity. Avocado is not only super creamy and delicious but has heaps of healthy fats. The word "fat" can be a little scary for some people. But we need healthy fats in our life. They actually help you lose and maintain a healthy weight because they are very fiber dense which makes you feel fuller for longer. 

I really love this meal because it has whole grains, healthy fats, greens, fiber, vitamins and antioxidants all in one place. Make it for your friends and family that are trying to be healthier but think nourishing food is flavorless or boring. This is bound to change their mind. 


1 cup of brown rice
3 kale branches
1 red pepper
1/2 red onion
1 avocado
Pine nuts
1 teaspoon Maple Syrup
2 tablespoons Olive Oil
2 teaspoons Dijon Mustard, seeded


Begin by cooking the rice by putting the 1 cup of rice with 1 cup of boiling water and cook until the water has evaporated, stirring occasionally
Next, chop and saute the pepper and onion
Tear the kale leaves off of the stems and steam until the kale is soft and tender
Create the dressing by whisking the maple syrup, olive oil and dijon mustard together
When all the ingredients have finished cooking, arrange in a bowl and put a sprinkling of pine nuts and a sliced avocado on top
