chia seed pudding with berries

People are always looking for creative breakfast options that don't include eggs or sugary cereal. Chia seed pudding is very simple to make and is so sweet and satisfying. Chia seeds are a superfood, which are foods that are extremely nutrient dense and packed full of antioxidants, vitamins and minerals. A little goes a long way in your diet. Chia seeds contain a lot of fiber and expand in liquid to make you feel fuller for longer. Fiber also helps to feed the good bacteria in your gut which is essential for a healthy gut and proper digestion. Chia seeds are also 15% protein. If you are on a plant based diet, like me, then this is an ideal breakfast to have and pack in the protein so that you aren't having late nights cravings or wanting junk when you're not even hungry. This meal is really simple to throw together but you do need to let the chia seeds and almond milk sit overnight. However, when you wake up in the morning, it just takes a couple seconds to make and then you'll be feel fabulously healthy all day. 

I N G R E D I E N T S

1/2 cup of chia seeds
2 cups of vanilla almond milk
3 tbs of maple syrup
Berries of your choice. I used blueberries and raspberries.

S T E P S

In a bowl, put the chia seeds, almond milk and maple syrup and whisk together
Let the mixture sit for ten minutes and then whisk again before covering and putting in the fridge
Next, let the pudding chill in the fridge overnight. The Chia Seeds will expand and it will turn into a pudding consistency.
In the morning, serve in a bowl with berries beautifully arranged on top.
