lemon broccolini with pine nuts
I kid you not, this recipe took all of ten minutes to make. And then like 5 seconds to eat because it was so delicious. Broccolini is just as healthy as regular, old broccoli but it's a little more sweet and tender. I just love it. If you aren't someone who enjoys vegetables or you are having trouble getting your family to eat them, try this recipe. It's much more appetizing than the soggy steamed broccoli you may be used to. The bright green color is so appetizing and there are even small yellow flowers on them that just add to the flavor. Plus, a squirt of lemon juice really brightens up this dish. Oh, and then there is that little crunch from the toasted pine nuts...so good. Broccolini is packed full of amazing vitamins like A, C and K. Vitamin A keeps your vision strong, your bones in good shape and your skin clear. Vitamin C boosts your immune system, maintains elasticity of the skin, and will keep you from catching the cold. Vitamin K builds strong bones and helps to prevent heart disease and blood clotting.
When you're young or don't have issues with your heart or your body as a whole, you may not think eating these types of health foods matter. However, we have one body and we must take care of it everyday. Do not wait until it is too late. Add more greens into your diet and you will see and feel the benefits. Treat your body like the temple it is.

1 tablespoon of Earth Balance Vegan Butter
a handful of pine nuts
S T E P S
Wash and cut the stems off of the broccolini
Steam the broccolini for 3-5 minutes, until it is bright green but not cooked all the way through. You still want a little crunch
Next, melt the vegan butter in a saute pan
Once melted, add the broccolini to the pan and stir so that it is coated in the butter
Squirt the lemon into the pan and continue stirring
Finally, sprinkle the pine nuts on top and let them toast a little bit while still stirring
This should take all of ten minutes
Plate and eat while warm
