easy white bean salad

This salad is super easy, super healthy and super, super yummy.  These are ingredients that you probably have in your kitchen and pantry so you can easily throw them together for a quick lunch or side dish. Beans: Not only do beans have a ton of protein they contain fiber, antioxidants, and vitamins and minerals like copper, folate, magnesium, manganese, phosphorous, potassium and zinc. Yes, please!

White Sweet Onion: There are phytochemicals in onions that attack free radicals. (Free radicals cause damage to living cells and tissues in the body causing the appearance of aging) Also, there is chromium and sulfur that helps lower and regulate blood sugar.

Parsley: Great source of Vitamin K (which helps regulate normal blood clotting and move calcium throughout the body), Vitamin C (helps protect your immune system, eye sight and even preserves smooth skin) and Vitamin A (promotes bone growth). 

White Wine Vinegar: It's acetic acid helps lower cholesterol levels

2 Cans of Beans (Butter Beans, White Northern Beans or Cannellini Beans)
Fresh Parsley
1 small White Sweet Onion
4-5 TBS White Vinegar

Open the cans and rinse out the beans
Chop up the parsley and onion
Throw everything in a bowl and mix it up
Stir in the white white vinegar. Start with a little and add more to taste.
Squirt some lemon on it
Refrigerate as the salad is best chilled
