the best lunch ever: avocado toast
This recipe is so simple. So simple that it doesn't need much explanation but I really feel it is my duty to help spread the Avocado Toast message as it is just the yummiest, easiest snack that you can eat morning, noon or night.
I N G R E D I E N T S
Bread (I use Gluten Free Sesame Ezekiel bread)
1 or 2 ripe avocados
Tomato (I like cherry tomatoes but any tomato will do)
Himalayan Pink Salt (just a healthier option than just regular salt)
S T E P S
Toast the bread
Make sure you have ripe avocados. I like to use two avocados because I really like to pile it on.
Cut the avocados, toss the pits and spoon it into a bowl
Mash the avocados with a fork
Spread the avocado mash on the toasted bread
Cut a wedge of lemon and squirt the juice in. I don't like to use a lot of lemon juice because it starts to taste like guacamole if you use too much.
Stir in the lemon
Spread the avocado mash onto the toasted bread. I like to make it as an open face sandwich
Slice the cherry tomatoes in half and place on top of the avocado
Sprinkle a little salt and pepper on top of the sandwich
You can also add arugula, spinach, toasted sunflower seeds, radish or anything else HEALTHY you have in your kitchen. (NOT EGGS OR CHEESE!)
