mashed pea and mint spread

Many people have new year resolutions about improving their health. There are a lot of mixed messages so it can be challenging to know what's healthy, what diet/lifestyle is best for them and how much protein, fat, carbs, fruit, veggies, blah blah blah that you need. This is a very simple recipe. It is simply healthy, simply nutritious and simply delicious. Peas are very low in fat and high in mostly everything else like protein, fiber, vitamin C, B1, B2 and B6, and anti-aging antioxidants that will boost your immune system and make you look fabulous in the process. Tahini is high in calcium and helps to detox the liver because of its high contents of Methionine. Fresh mint will soothe your stomach and aid in healthy digestion. I chose sourdough bread for the base of this spread since it was the healthiest, freshest choice I could find at my local market. It is really important to check the ingredients when purchasing pre-made foods. It takes only 4 ingredients to make bread- flour, yeast, water and salt. Be mindful of additives and preservatives that get put into bread that are totally useless and are bad for your health.

I N G R E D I E N T S

2 cups of frozen peas
1 clove of garlic
1 spoonful of tahini
1 spoonful of apple cider vinegar
juice of 1/2 lemon
a handful of mint leaves
dash of salt and pepper
any kind of vegan bread, I used sourdough

S T E P S

Bring a pot of water on the stove to a boil. Add in the peas and let cook for about a minute. 
Put the peas in a strainer and rinse with cold water
Peel the skin off of a garlic clove and pulse it in the food processor until it is minced
Add in the peas, mint, apple cider vinegar, tahini, lemon, salt and pepper and blend until smooth
Toast some bread and spread the dip on top and enjoy!
