bean, kale and sundried tomato dip

Who doesn't love chips and dip? hellllloooooo. This is the perfect little snack to make when you have hardly anything in your fridge or pantry and you're looking to throw together a healthy snack in a hurry. That is how this recipe was created. Beans are such a versatile, yummy food that are super cheap and have heaps of protein. They can also aid in weight loss as they have a high fiber content, which makes you feel fuller for longer. Also, who doesn't love kale? It's just the greatest. It contains zero fat, hardly any calories and tons of fiber. Which, like I said, will help you to feel satisfied and fuller for longer. It's also packed full of vitamins, antioxidants and omega-3 fatty acids. 

I get that it's really easy to go to the store and buy pre-package goods and the thought of cooking can be daunting for some. However, most products are filled with toxins, added sugars and preservatives. People don't realize how easy it is to just make snacks at home that contain nothing but goodness and actual real food. If you're going to buy pre-made foods, make sure you check the ingredients! A lot of them contain xanthan gum and guar gum. I don't know about you, but I have a hard time pronouncing them and I certainly don't have them in my cupboard. Let's keep it clean, people!

I N G R E D I E N T S

1 can of butter beans
1 large handful of kale
3 sun dried tomatoes
1/2 lemon, juiced
3 tablespoons of extra virgin olive oil
Salt to taste
Corn Tortilla Chips

R E C I P E

Put the beans, kale, sun dried tomatoes, lemon, olive oil and salt in a food processor and blend until smooth.

Enjoy with your favorite chips!
