white sweet potatoes with maple tahini dressing
White Sweet Potatoes are really awesome. I had heard about them from fellow vegan foodies and have been keeping an eye out for them, as they are, admittedly, a little hard to come across. Check out your local farmer's market or Whole Foods as they probably do have them. If they don't, request them! Sweet Potatoes are a wonderful vegetable as they are filling, sweet and just the greatest comfort food. Sweet potatoes are obviously sweet tasting but unlike other sweets, these potatoes contain natural sugars that are gradually released into the bloodstream, making it a consistent and balanced energy source. Other "sweet" foods that contain refined sugars, give you blood sugar spikes and are linked to fatigue and weight gain. So, why not get your sweet fix from a natural, healthy source?
I N G R E D I E N T S
3 White Sweet Potatoes
Extra Virgin Olive Oil
Course Salt and Pepper
Roughly chopped Kale or any other greens on top
For the Sauce:
1 tbs Tahini
1/2 Lemon, juiced
1 tsp Maple Syrup
2 tap water
Course Salt and Pepper to taste
R E C I P E
Preheat the oven to 350 degrees Fahrenheit
Wash the sweet potatoes and slice them into 1/4 inch pieces
Lay flat on baking sheet and drizzle olive oil on top, getting each slice
Sprinkle a small amount of salt and pepper on top
Put the potatoes in the oven and let roast for 45 minutes
While the potatoes are cooking, mix together the tahini, olive oil, maple syrup, lemon juice, water and salt and pepper to taste. Whisk together until creamy and completely blended.
Thinly chop kale or any other greens.
Once the potatoes have finished roasting, arrange them on a plate and sprinkle the tahini and kale over the top.
