marinated portobello mushrooms
My fiancee is obsessed with mushrooms. So, being the fantastic partner that I am, I like to spoil him with different mushroom dishes. Yes, I know, very romantic indeed. After all, the way to a man's heart is through food, right? Especially healthy food. Mushrooms are fantastic vegetables because they are designed to make you look really, really good- and not just because they aid in weight loss and gives you brilliantly, shiny hair! They are a miracle for the skin. They help to treat acne, they hydrate the skin, they naturally lighten dark spots, they help even skin tone and can even help reduce fine lines and wrinkles. Come on! That is amazing. Isn't nature amazing? amazing. amazing. amazing.
Oh yea, fun fact. Mushrooms are the only vegetable that contain Vitamin D.
I N G R E D I E N T S
2 packages of mini portobello mushrooms
2 cloves of garlic
1/2 cup fresh parsley
4 tablespoons red wine vinegar
2 tbs extra virgin olive oil
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/4 lemon, juiced
Salt and Pepper to taste
R E C I P E
-Heat up a nonstick pan with a drizzle of olive oil
-Mince the 2 cloves of garlic and cook in the pan
-Pop the stems off of the mushrooms and toss the shrooms in the pan to cook with the garlic and olive oil, stirring occasionally
-In a bowl, combine the parsley, vinegar, olive oil, thyme, oregano, lemon juice and salt and pepper and mix to make the marinate.
-Once the mushrooms have cooked, after about 7 minutes, add the mushrooms to the marinate
-Cover the mixture and put in the fridge for two hours, stirring occasionally
-Put in a bowl and serve cool or at room temperature
