blueberry overnight oats

I am finally getting on the overnight oats train....and boy I sure am glad that I did! I am digging this dish for a few reasons. First, It's incredibly simple to throw together at night and then is ready and waiting for you to eat in the morning. Second, this dish is a great alternative to a breakfast smoothie or bowl of cereal as it's cool and refreshing, but very hearty and filling. Third, and most importantly, it's packed full of healthy benefits.

I am loving nut milk because it's sooo much better for you than drinking another animal's breast milk (because, that's what it is) Almond milk boosts your immune system, reduces your risk of osteoporosis, helps repair muscles and skin and is an excellent source of omega fatty acids.

I haven't used hemp hearts in a recipe before on Lux Lake. But, I recently bought a huge bag and I am obsessed with the taste and texture, so I am sure you'll be seeing a lot of them in the future. They're a great source of protein and healthy fats. Hemp seeds also aid in weight loss by helping you feel fuller for longer and reducing  sugar cravings.

Besides the deliciously rich taste, I love this natural sugar because it boosts liver function, which is the body's major detoxifier and is loaded with so many antioxidants that help to combat the evil free radicals that try to age us. Thank you!

In a mixing bowl combine the oats, almond milk, chia seeds, hemp hearts, maple syrup and cinnamon. Stir until the ingredients are completely combined.

Grab a jar, or a bowl if you don't have a jar, fill the jar halfway with the oat mixture. Next, put a layer of blueberries (or whatever fruit you like) on top of the oats and then more of the oats so that the jar is filled.

Cover and put in the fridge overnight. In the morning, add more berries on top of the oats before eating.

Enjoy!
