cucumber mint salsa

Let's be real. Who doesn't love crushing on the classic combo of chips and salsa? They're the best munchies. Traditional tomato salsa is great but been there done that, at the moment I am really into the totally refreshing combination of cucumber, red onion and fresh mint. There is a reason why spa goers place cucumbers over their eyes- they're hydrating, nourishing and help flush out toxins in the body. The red onion adds a nice little kick and crunch to this dish. But their real power is that they contain the bioflavonoid Quercetin which is a disease fighting, free radical defeating, antioxidant filled superhero of a food. Last but not least, the mint makes this salsa cooling and refreshing. Fresh mint is a healer. It soothes your stomach, aids in digestion, is a great remedy for a headache, nausea and helps to clear your sinuses. This salsa is basically an epic trifecta of health. 
 

I N G R E D I E N T S

1 large cucumber
4 tablespoons of red onion
3 tablespoons of fresh mint
1 tablespoon of white wine vinegar
2 teaspoons of olive oil
1 lime, juiced
 

R E C I P E

Wash and peel the cucumber
Cut the cucumber into quarters, slice off the seeds and discard
Dice the cucumber, red onion and mint into tiny pieces
In a bowl, mix the cucumber, onion, mint, vinegar, olive oil and lime juice
Serve with chips, on tacos, pita or raw veggies
