garlicky noodles with kale
Welcome back to another edition of Let's Throw Together Whatever I Have in my Kitchen. Today we are working with some greens (kale in my case, but spinach would also work wonderfully), an onion, gluten free noodles, garlic, olive oil and some nutritional yeast. Together these simple ingredients create a delicious pasta dish that's hearty and satiating. I try to get my veggies in wherever I can and in the process I have found that I really love wilted greens in my pasta. They add a certain freshness and lightness to what would normally be a heavy noodle dish. I have found this combination by experimentation, and that is one of my favorite things about cooking. You don't always need to find inspiration on Pinterest or follow a recipe, sometimes it's exciting to take a risk, use what you have in your pantry and attempt to make something delicious. It isn't difficult to fall in the routine of preparing the same few meals for yourself or your family. I challenge you to experiment, take risks and see what happens!
I N G R E D I E N T S
1 package of Gluten Free Noodles (I like the brand Tinkyada)
1 yellow onion, chopped
3 cups of kale, roughly chopped
2 cloves of garlic, minced
2 tablespoons of extra virgin olive oil
salt and pepper
optional: nutritional yeast
R E C I P E
Bring a pot of water with a sprinkling of salt to a boil and cook the pasta.
Put a non stick pan over medium heat and add a tablespoon of olive oil and minced garlic. Let the garlic cook for one minute and then add the onion and stir.
Once the onion is translucent, add the kale to the pan and let cook for another minute while stirring.
Next, add the pasta, another tablespoon of olive oil and a sprinkling of salt and pepper to the pan. Mix well so that the noodles are covered in the yummy flavors of the veggies and olive oil. Let cook for another minute and then serve.
If you have nutritional yeast, sprinkle it on top as a delicious replacement for Parmesan.
