pesto quinoa salad

Are you sensing a trend? Yes, I realize I am all about the grain salads filled with an array of vegetables. But it's the summertime and I am surrounded by gorgeous fresh veggies at my farmer's market and I need to take advantage. It's also all I am craving right now- a grain, a ton of veggies, and a delicious dressing. This time I opted for quinoa and pesto because until recently, I'v only ever had pesto on noodles.  Then, I added it as a dressing to a veg packed salad. It was so delicious andI have been craving it ever since. So, I combined the two ideas and created this happy medium.

I N G R E D I E N T S

1 cup of quinoa
2 tomatoes
spinach
3 green onions
1 large handful of fresh basil
2 tablespoons of walnuts
2 garlic cloves
1 tablespoon of nutritional yeast
1/2 cup of olive oil
1 tablespoon of water
a dash of salt


R E C I P E

-Begin by cooking the Quinoa in 1 1/2 cups of boiling water. Let cook for about 15 minutes until all the water is gone. Fluff the quinoa with a fork and place into a mixing bowl. 
-Cut the tomatoes into quarters, slice the green onions and cut the stems off of the spinach.
-Add the tomatoes, spinach and green onion into the bowl with the quinoa. 
-Mix the basil, garlic, nutritional yeast, olive oil, water and a dash of salt into the food processor to create the pesto.
-Stir the pesto into the mixing bowl with the quinoa and vegetables.
-Sprinkle some fresh ground pepper on top and serve
