Autumn arrives and suddenly it's pumpkin everything. Pumpkin Spice Latte. Pumpkin waffles. Pumpkin soup. Pumpkin Pie. Pumpkin Carving. Pumpkin. Pumpkin. Pumpkin. So why not a pumpkin pie milkshake, too?
Let me tell you. This baby is delicious. It's a completely satisfying snack or dessert minus all of the guilt. In fact, these ingredients contain lots of goodness and benefits to nourish our amazing bodies. Pumpkin has loads of fiber, vitamins and minerals. If you didn't know, fiber is that magical part of the plant that helps the body digest food efficiently and prevents you from being constipated. Yippee. In addition, pumpkin contains an efficient amount of iron and vitamin A which will boost your immune system and help to keep you healthy with the colder weather approaching. Pecans are another delicious fall flavor I can't get enough of. (I am planning on making a healthy, vegan pecan pie for thanksgiving this year! Thoughts?) This healthy fat reduces inflammation, contributes to a healthy heart and even lowers bad cholesterol. Pure maple syrup is an excellent natural sweetener with an abundance of calcium, iron, magnesium, phosphorus and zinc. I N G R E D I E N T S
3/4 cup of pumpkin puree
2/3 cup of non dairy milk (I used almond milk)
1/4 cup of raw pecans
5 medjool dates, pitted
1 tablespoon of maple syrup
1/2 teaspoon of pumpkin pie spice
1 cup of ice
R E C I P E
Put all of the ingredients into the blender and mix until completely smooth.
Pour into a glass, sprinkle a little pumpkin pie spice on top and enjoy!
